We are a Dutch couple that would like to hike this year (october/november) the whole hike from north to south (not with a guide but just our selfs).

We did diffrent longdistance hikes before (around 1200 km) and always sleep outside. I like to know if it is possible and safe to do wildcamping the whole trip. Of course we don't leave anything behind and are very carefull with the nature. I saw the thing with trail angels but that is not what we want (nice for other people). We like to hike and sleep in the nature (not with other people) as many times as possible.

Yes it is safe.

In the desert there were reports of thefts of valuables from the backpack which was left outside the tent.

The problematic area is between Arad to Mizpe Ramon. Keep your backpack in the tent and the valuables
(money, camera, passport, credit cards) inside the sleeping bag .

I'd add two percautions:
First, in some places (nature reserves) there are designated campsites (usually just a patch of land with a sign nearby), and sleeping outside those campsite is prohibited. This is not a problem, you just have to look at the map and plan in advance in order to get to such a campsite by night.
Second, while most animals in Israel are afraid enough of people so even food left near the tent but not inside would be safe, it's not always the case - two weeks ago a fox stole some Hot Dogs from my tent's vestibule.
In other words, just keep the food inside the tent and you'd be fine.

As for people, it's safe. If you are worried, sleep some 50m away from a designated campsite - no one will find you in the night.
