Credit cards are accepted almost anywhere.  

For some services you have to pay cash only: Taxi, water caching service (in the desert), some B&B and all low cost accomodation. If you spend a night with a trail angel a donation is always appreciated NIS 20-25 is common.

It is also advised to carry some cash or traveler's checks in case you lose your credit card.

Withdrawing cash is done mostly in ATMs. If for some reason the cash machine doesn't like your credit card and you are in a town or city, go to a bank which is almost always next to the ATM.
